I bought my wife the Sense 2 and her phone is a Galaxy Note 20 Ultra. Is the sense 2 capable of showing picture text messages on the Fitbit itself? When I send her a picture. It just shows up with the text words “image” and she has to view it on her phone.

That's correct, no pictures in messages will be displayed.
