I am trying to edit the settings on my Sense 2 for the exercise app. I was able to swipe up on the Pilates setting and customize my watch face to show the data I want, but when I try to do it for "walk" or "run", the app starts timing my run before I have a chance to swipe up and change the settings., Is there a way to tell it to wait until I hit "Play" on the walk/run activity so I can adjust the settings?

Hello @Ladylaw71 and welcome to the Community. If you are looking at the Sense 2 tile (screen that you see by swiping) that shows three exercise icons in circles and "All" below them, these are Quick Start shortcuts. You can't edit from the Quick Start. Tap on "All" and the Exercise app will open. Now you can choose your individual exercise and edit the settings before you start. The Sense 2 comes with three default Quick Start shortcuts. It will show your last three shortcuts and you pick different ones.
