To adjust display brightness, just swipe down to access quick settings. By tapping on the icon in the bottom right corner, you can cycle through your device's three brightness settings.
Concerning your issue not being able to receive notifications on your Sense 2, please have a closer look here:

Hi @Buddie1 - pull down the watch face to get to Quick Settings and turn off all icons.
If you have the watch in sleep mode you won't get calls or messages or be able to adjust brightness.
Once not in sleep mode you can adjust the brightness there too but often it has a mind of it's own.
When in a call you can adjust the volume, but it is not remembered, so has to be done each time.
