My goal is to monitor my steps and food intake to lose weight. Everything is working great but don’t understand the difference between walking (steps) as an activity over walking (steps) as an exercise. Is there an advantage one over the other?

The steps are counted the same.
The walk exercise enables you to track your walk with a map using the GPS and gives you other features as a bespoke entity.
If the walk is long enough [and has not been manually started as an exercise] it will be auto recognized as a walk but without the detailed information being displayed on the watch face.
