Assistant want show up as a tile in the app.
I have tried factory rest, unpairing and pairing, restart of both watch and phone, FC app many times.
I have enabled Fitbit in Google Home.

Hi @SunsetRunner - if your factory reset didn't load the latest firmware you might not have access to Google Assistant.
In the Fitbit App, click profile photo and device photo. There you should see a Voice Assistant tile. Click on it and you should have Google and Alexa, if you are on the latest version. What's changed in the latest Fitbit device update?

The issue turned out to be related to language settings. If i select US language settings in FitBit and in Google assistent, then it works. That however changes all the language settings on my watch, so not desirable. Guess I have to wait for local language support - zzzzz.

@SunsetRunner - thanks that's not certain you have to wait.
Once you have set it up you may be able to revert to your desired watch language and it will still work.
Try just reverting watch language once installed.

I tried that, but then the Assistant stop working.
