I have been wearing my fitbit Sense for about a week. It doesn't record any cardio or peak minutes when I exercise. Also often doesn't record any fat burn minutes. Thinking about going back to my previous fitbit which worked fine.
Oddly I notice on the dashboard on the website I get different figures to what is showing in the phone app. So today on the dashboard it says peak 0 cardio 18 fat burn 343 minutes. On the phone app it says 0 peak 0 cardio 22 fat burn (which is also what it says on the fitbit itself). I guess this is a different problem.

I personally can hit cardio minutes just fine but I haven't hit any peak minutes since using my sense for the last 2.5 months. It probably does have to do it the poor sensor or algorithm. I know my average is even higher as I've spot checked between sets of moves and the Sense is always below. I really hope a new device comes out this year but I think Google is putting it's resources into a Pixel Wear OS watch. I hope to be proved wrong.

@SunsetRunner Plyometrics. It always gets me the highest heart rates and heart rate averages.
Best AnswerWeights gave me highest results. While walking, biking, spinning, Stair climber, were all equal to sitting on the couch. Second highest results seemed to be prepping food. Seems like every time I looked at the watch while say, rinsing romaine in the sink, it'd be fat burn or cardio.
