I understand the steps and heart rate colours and numbers . But what does the purple half moon with a z and number next to it represent.

Have a look at the following help article from Fitbit that provides a good explanation:

https://help.fitbit.com/articles/en_US/Help_article/2439.htm?Highlight=sleep%20score

It seems that a score of 71 is classed as "fair" and just below the average range of 72 - 83

Which clock face are you using? From what you describe it sounds like it might be your sleep score

It is the default clock face with the three colours.

That's the Spectrum clock face. It doesn't have any details for it in the clock face gallery but I have seen other posts that say that number is indeed your sleep score.

I still don’t understand what the number means..is it the number of minutes I actually slept, surely not. What does the score 71 mean? Sorry maybe I am just a bit thick, but it doesn’t mean anything meaningful to me?

That would be your sleep score for the previous time you was asleep.
