I understand the steps and heart rate colours and numbers . But what does the purple half moon with a z and number next to it represent.

Which clock face are you using? From what you describe it sounds like it might be your sleep score

That's the Spectrum clock face. It doesn't have any details for it in the clock face gallery but I have seen other posts that say that number is indeed your sleep score.

That would be your sleep score for the previous time you was asleep.
