Which features will I not be able to see if I do not sign up for premium when buying the Sense? 

Are they the same for the Versa 3?

Thank you for your inquiry. You can actually see a breakdown of what you can see with the Premium membership in this help article. The difference between the Versa 3 is the sensors the Fitbit Sense has. You can read more about the Versa 3 here and the Fitbit Sense here.
