I have had my brand new Sense for about 2 weeks. I have my screen set to Always Off - but I have set it to be Always On for exercise. Now suddenly - the screen turns off after about 6 seconds for every exercise I start - even though the setting still is to Always-On-Display. I have restarted the watch, made sure I have the latest version of the app. In the Settings, the Display Screen Settings are completely dimmed out and can't be changed any longer. You can still access the Screen settings under exercise - but screen still shuts off. Some other settings are dimmed out as well.
I have the latest update off the app on my Pixel 3a XL - the one from January 28 according to Google Play - and now I'm wondering if the update the cause?? Because it worked like a charm until three days ago.
;-( So sad - having the screen on during exercise was the whole point I invested in a Sense.
Anyone with a fix? Do I have to factory reset and start over?

You are probably accidentally in 'Sleep Mode', intentionally preventing bright light.
Go to Settings > Quiet Modes > Sleep Mode and slide to Off.

Thanks JohnnyRow - unfortunately that was not the case. But - I'll make a note on that to check in the future. I ended up doing a factory reset after I had done everything else I could find. Good new - it fixed the display setting issues. Bad news - now the Sense doesn't sync anymore so now going through all the troubleshooting for that....
