The post was addressing using the Sense screen to scroll up to the Today app. Or, you may have to swipe to the left to see the Today app, depending on your watch setup. The "till it shows" was referring to the piece of paper becoming visible from the other side of the watch after it was slid under it.

Clarifications:
till it shows "--" [is equal to no heart rate] - this means the paper has successfully blocked the heart sensor and the watch is no longer detecting any heart beat.
On the Sense, Swipe up takes you to the Today app information - the same thing happens if you swipe left and load the Today app.
The idea is simply to be displaying the heart rate in a standard Fitbit app, to be sure no other program/watch face is interfering.

I think since the recent update they have mostly fixed the issues with the heart rate scanner.
I’ve just got a Apple Watch 6 which is regarded as having the best wrist based heart monitor and the Sense now closely matches. A lot of times they are identical or the sense is 1heart beat higher.
where I do think there is a bit of issue is a bit of lag, the Apple Watch reacts to changes a lot better, I’m think maybe this is down to the power of the processor, the Apple Watch must have one of the most powerful in the business and the Fitbit is unknown
