In the past 3 days my Sense battery has unexpectedly drained and switched off with no warning. It worked fine before the 5.1.1 update, so I’m not sure if it’s that or just coincidentally something else. I’m normally sitting at my desk when it happens, so there’s no GPS active, or music playing. I’ll be returning/exchanging if I can’t fix soon though!

Thanks for the details and I'm sorry that your Sense is having this behavior. This shouldn't be happening and while you're not using GPS or music control, may I know if you're using an animated clock face? Is the Always-On Display turned on? Also, is your watch tracking SpO2 data? I'm asking this as if you're using these features, you may have to charge your Sense more often. I'd recommend to follow the suggestions described in this help article, fully charge your watch and monitor its behavior in the next days.
