I bought the watch today and I just found out that Google Assistant does not work. I feel cheated, when will it work?

My issue exactly. I contacted support and they took me through Restarts,Reinstalls & Reactivates with no luck and the conclusion they came to was that is must be working.
To be exact after any of the three R's it works for less than 30 seconds and back to "Connection lost".
Both me and my coworker has this problem at the same time. You can not tell me they don't know there is a problem they just refuse to acknowledge it.

I found my issue, I was on the beta of Google version 12.4.6.29.arm64 that caused the problem. Rolling back to version 12.3.14.29.arm64 and all is right again.
Remember "Beta" is a greek word meaning "Still doesn't work".
