After the last Day of 2023 the SpO2 data stopped. Restarting the Sense and my Phone didn't help.
Anyone who can help me?

Clear the cache for the Fitbit app on your phone. Look at Settings>App Info>Fitbit>Storage. Then press Clear Cache. Exit out of App info, let your watch sync and wait about 15 minutes and see if the SPO2 fills in. I have to do this periodically.
