Unable to call or text with Google assistance. Unable to recognize contacts.

@StarryEyed88 which country are you located in? Certain GA features are geo-restricted. It's up to Google not Fitbit. For example, if your GA is set up with US, you will be able to send text messages and make calls. I cannot text using my GAs linked with Canadian accounts.
