Taking into account that:
Is there a way to know my Sense firmware and OS update history, including the dates when they were applied?
If not, where can I find Sense "official" updates release dates?

It would be good if there was a proper history.
It should be noted also that Fitbit make on the fly changes [Health Metrics, Fitbit App tiles etc.] without notification - they just appear which further complicates keeping track of changes.
In addition, many updates and settings changes can get done when you charge the watch without you knowing.

So, you have also the impression that we have not access to a history of the updates done since we bought our Fitbit device. I haven't found anything about that on the help pages.
I think that, when everything goes ok and updates do improve existing features, we wouldn't even bother with that. But what happened after the May/June update (I don't even know anymore its number, had to do a wild search to try to find it) and our willing to help get things right again, makes that history a great help, at least for some of us, users, I think. It wouldn't be that difficult for Fitbit to provide that, anyway.
Concerning the "on the fly changes" you mention, I had already suspected that. It's hard to find a good reason why Fitbit keeps so secretive about those changes and updates. They would be quite helpful now.

I agree with you @SunsetRunner . Its very hard to help Fitbit and others when we don't have the information at hand.
From experience I keep a log of when things get updated, so to know how to help and see what's changed.
In the playstore you can see a history of all App updates, but only the last one. It would be good if Fitbit did the same.
