I thought you couldn't just drop right off into deep sleep but it shows me doing this often and I get a LOT of deep and REM sleep.

I've had nights where I drop into deep sleep with only a minute or so of light sleep. Not exactly what you're seeing, yet similar. Just recently, I had a night with comparatively a lot of deep sleep.
Your light sleep stage might have been so short that it didn't register on your Fitbit.
What's important is how you feel in the morning. Do you feel rested and don't have "brain fog"? If you feel fine in the morning, you're probably okay.
Another thing to watch is the frequency that this happens. If you see this kind of graph only every now & then, it might be your body being very tired and ready for recovery. If you see it frequently, you might want consider discussing this with your doctor/healthcare professional. There might be something else going on that should be looked at by a medical professional.
