Welcome to the Fitbit Community @cassie5555, hope you're doing great! It's possible to Factory Reset your tracker.
This erases any tracked data (on the tracker) since the previous sync. If possible, make sure the tracker recently synced to your account.
In addition it's possible to unlink the tracker manually from your account when desired on your account settings. There's a option to remove the tracker from the account on the bottom of the devices settings page (Fitbit.com), click the link above to open the tracker settings page.
Afterwards when the new owner links the Fitbit to their account there's anything to worry about as my friend @SunsetRunner said.
