Hi, @Nolashade! Yes, if you track an exercise in MFP (or it's sent there from another app), that activity is sent to Fitbit and overwrites normal step activity/HR calories during that period.

Yes, if you don't want the calorie estimate from MFP and would rather just use the HR data from the Blaze, all you need to do is delete the MFP activity in Fitbit. From my experience, once the exercise is deleted, it won't come back.
