Hi MFP food log synced for 2 days successfully but has not synced for the past 2 days. I have manually pushed sync in both apps, along with removed and re-paired. Unsure what to do next.

When you unlink both accounts, did you just revoked the app permission from the Application settings on the Fitbit site or did you also disconnect the Fitbit app from the Apps tab on MFP? If not, it's possible you will need to disconnect it once again:
Once disconnected, go to the applications settings on the Fitbit site, search for MyFitnessPal and click on Revoke Access. Afte that, wait for 15 minutes and reconnect the apps:
Additionally, please check that your time zones and profile information on Fitbit and MFP are the same. Remember that even when MFP syncs information every 15 minutes, it's possible you will need to wait up to 24 hours for the information to sync again if you have just unlink and relink the apps.
