With the number of work related health initiatives that would like access to our fitbit data increasing we should be able to do things such as allow an app access to our number of steps but not our sleep, or only allow access to summative data for the day but not the minute by minute data. I am leary about giving a subcontractor of my employer access to everything that my fitbit collects but I wouild like to take advantage of the automatic reporting that it allows.

Welcome @LauraA1, I've noticed you are new around. I see what you are asking here. In other words a way to select which type information you want to share with third party apps. At the moment which data is share with each integration will depend itself of the app you are associating to your account since is based on the type of data the app require. to give you an example: with Weight Watcher the information from Fitbit is converted in activity points since is how that service reward the users.
Although I think is a good idea that you can share in our Feature Request board. If you find that a similar suggestion has already been made by another member of the community, you can vote for their idea and add your comments.
