 My swim lap length is set to 50m and I cannot find a way to change that either on the watch or the fitbit app.

Do you know where I can change it?

Open the Exercise app on the watch (press the side button, select Exercise), select Swim activity, swipe up for the option, and then scroll until you see Pool Length.
