I can find an exercise on the dashboard and manually enter the information. When I manually entered the info on the dashboard it did show up in the app on my phone, but it doesn't show up in the list to choose on my fitbit versa 4 so I can start and stop it while conducting the exercise.

Just jump in, to add my 2 cents to Heather-M's post.
If you add or edit an activity manually, this will be shown as a recorded and finished activity on the app and online Dashboard.
The Versa 4 has many activities available to choose form.
If the one you are looking for is not listed on the Exercise app on the watch, it cannot be recorded with it. But you have many alternatives, like using outdoor training.

@igm58 Versa 4 (and other Fitbits) don't support horseback riding. Dashboard offers own database of exercises when you log or edit activity. Watch offers 40 (in case of Versa 4 and Sense 2) or less (older devices).
