I saw similar questions pop up with no response so I'm not sure if this just isn't possible, but is there a quick/easy way to access my own data via API for personal project development? I don't have a website for my app, it's just me looking for fun things to make for myself and my husband and would like to integrate Fitbit data in the project. Is this possible?

Welcome to the forums!
For testing or personal project development, you can register an application with the sole purpose to extracting your own personal data, by registering a "personal" application at https://dev.fitbit.com/apps/new.
Refer to our documentation for setting up an application here: https://dev.fitbit.com/build/reference/web-api/developer-guide/getting-started/
Also, since this will be a "personal" application type, you can enter mock values for Company URL, Privacy Policy, and Terms of Service, since you are only able to pull your own data under this classification type.
