Hi, @Fitgirl5! I don't have an answer to the first question, that's really strange. As to your second question, Fitbit looks at your history and your activity during the current day and tries to predict how many more calories you will burn. It then subtracts any calorie deficit you have requested and food you have already eaten and gives it to you as calories left. You'll see that number change throughout the day, based on whether you're on track with what they predict or doing more or less. That's why the number doesn't add up perfectly with what your current snapshot of in vs out is.

Welcome to the forums @Fitgirl5! Adding to @MakMak's excellent response, I'd like to mention that the portion size on the food log may be a bit smaller than the portion you're serving and this is why your Food Plan is logging it with lower numbers.
My best tip for this is to use your Barcode Scanner; since it'll provide the standard size for an item; regardless of the food directory you're using.
If you're more of a home-cook rather than a pre-packaged cook; I recommend to link your Fitbit Profile to MyFitnessPal which has users all over the world and a huge database, including barcode scanner and recipe builder.
