I could log an activity and choose "motorcycle". By choosing the start time and duration of the activity to match my riding habits, the App would automatically deduct the erroneous steps added whilst motorcycling. It was quite accurate too. I therefore would end the day with the correct number of steps.

You can use the Driving activity to adjust any steps recorded during your ride.

@LegoSeller Thanks for bringing this to our attention, and sharing a screenshot of what is displayed on the Fitbit app. I understand how useful this function is for you and as our friend mentioned, you can choose Driving to log your rides and get your data negated during that time. For more information, see this help article.
By the way, I moved your post to the iOS App board as this seems you were asking a question rather than a suggestion for the Fitbit services.
