Is anyone else’s app freezing when you check your sleep pattern?
it states the software is up to date and I’m running it on an iPhone 11, I am unable to tap on any of the recorded sleep patterns.

Thanks for the details shared in your post. I appreciate your efforts and would like to advise that our team started to release a new version of the Fitbit app which brings fixes to bugs and improvements. I recommend to download it once you see it available: How do I update the Fitbit app?
You can also try the following:
- Log out from the Fitbit app.
- Force quit the Fitbit app.
- Clear your iPhone cache: How to Clear Your Browser's Cache on an iPhone.
- Reboot your phone.
- Open the Fitbit app and log back into your account.
If you're using Apple iOS 13 or higher, uninstall and reinstall the Fitbit app.
