I would like to be able to add an exercise that is not on the current list. It should let me enter any text I want.

Hi, @alyssarae1 you definitely can add any exercise you want, and a very large number are available in the Fitbit database. Depending on what exercise you would like to track you will need to track it using the exercise app on your Fitbit as either a “Workout” or “Outdoor workout” so make sure these are among the exercise shortcuts loaded on your Fitbit.
Once you have finished your workout, please sync your Fitbit to your phone app. On your phone app go to the exercise tile and choose your workout/outdoor workout. Near the top of the screen showing details of your workout please click on Categorize Exercise. In the search box type your activity and if it comes up choose it and job done.
If your exercise/activity is not in the Fitbit database you will need one extra step in order to add it as a “custom activity” - you only need to do this once. After it has been created as a custom activity it will be available to you in the search box under categorize exercise in the app. To create a custom activity you must go to the Fitbit.com dashboard (not the app). From the front screen (top) choose “Log” and then “Activity”. On the activity screen scroll down to the very bottom where you will see on the right hand side a box with the option to create your Custom Activity. Type the activity name into the box and it will be created for you.
I know of people who use this facility to track “activities” from piano practice to panic attacks and anything else you can think of!
There is actually a lot of flexibility with your Fitbit once you get familiar with the options.
