Not sure where to report this bug, so I try here.
There is an existing bug in the Fitbit App for iOS, where the heart rate is measured in the app, but it is not displayed in the history graphs. As far as I can tell, this bug exists since about 6 months and is independent on the version of iOS you're running. Android devices are not affected.
You will notice this bug if your "Heart" tab does not show any graph, or your "Workout" you recorded does not show any graph or the text 'no data'.

The fix to this is to switch your iPhone to 24h time. This is the process:

Settings --> General --> Date & Time --> 24-H Time --> slide ON
Then restart the Fitbit app (closing it by swiping up), reopen the App and check whether the graph appears. This should instantly fix the issue.

There might be other functions which have been impacted by this, if so, let me know.
The bug is reproduceable across different Apple devices (iPad, iPhone) and across different models (Air, gen7, iPhone 13, iPhone 16). It always comes back down the 24h format.

Thank you! Changing the time setting resolved the issue. I’ve been dealing with it for a week—tried deleting the app, unsyncing it, and even creating a new account.

I need to track my heart rate at the moment. A few weeks ago my app wasn’t showing the graph for the day. I tried so many different things and nothing worked. I even got a new watch. The battery on my old one was rubbish. I was about to take the new one back.

Thank you so much for this solution, it's been a source of much frustration over the past couple of months.
However, it still leaves the question, "where to report bugs with the App?". This is clearly a bug, not a "user education issue". It is perfectly reasonable to use an iPhone in 12 hour mode.
In looking for a solution to this issue I did contact support via Live chat and did or the usual steps, restarted my Charge 6, reset it to factory settings, reinstalled the App. It was only going back and re-searching the community posts that I found this fix. Clearly support are not aware of this problem.
This issue needs to be raise as a bug so that it can be fixed in future releases of the App. There are still a number of bugs with the App since it was revamped in Sep 2023. So, where can App bugs be reported?

Regarding ‚where to report bugs with the App‘:
As far as I understand there are multiple ways to do this. One is here. I can‘t find the comment anymore, but a Moderator of the forum confirmed to me, that he will forward the bug to the iOS team.
I also posted on r/fitbit where Fitbit mods are present. An other way to give feedback is by rating the App in the iOS store,
The best way to give feedback might however be within the app itself. To do that, in the Fitbit app, tap on your profile picture on the top right, then choose „Feedback geben“ (translates to „provide Feedback“ I guess).
It‘s for sure not an education issue, and it is especially frustrating, because it seems to be a very simple fix. Programmers use different time zones all the time in apps. The issue is known from multiple reports, is well reproducable and the root cause has been identified. It should not take two months to provide an update which affects so many people.
As an alterntive, have you, or could you try to report a bug report with life chat?

I just changed the time setting on my iPhone to 24 hour then synced my Fitbit and it worked.

Yes, I finally did this late last night. Changed to 24 hour clock on both iPhone and app and after 3 months finally have my data back. This is totally unsatisfactory though as I hate 24 hour time and one app should not be dictating how time is reported on your phone. Google need to get their act together and actually fix it.

Ive been speaking to 'support' since the end of November about this, shocking level of 'support', its been passed to the 'techincal team' twice, I was on the verge of chucking the watch away and buying a different brand I was so frustrated so THANK YOU so much, it worked straightaway, Ive emailed the 'support team' with the URL to this thread.
Amazing that no-one knows about it and its left to customers to figure it out
