Assuming this data is new with an update? Can anyone point me to explanations? No idea what I’m looking at here...

If it is gone today, I think that means something Fitbit was doing on their end, rather than your app version.  But if you do want to find app version, click on user pic at top left of 'Today' screen; then on 'Account' page,scroll way down to 'Help" and Help show the app version you have.

 

But I have never seen display like you had,

but, on looking again, I wonder if the 2nd display could have been fitness level and 3rd display minutes in heart rate zones, the regular things for those displays but just presented as raw data instead of graphically, as a temporary glitch.

Before posting, re-read to see if it would make sense to someone else not looking at your Fitbit or phone.

Is that from clicking the heart rate tile from the 'Today' page?

Yes, it is. I don’t see it today oddly enough. It was in place of the graphs that you can maximize. Where would I find the app version on ios?
