Since downloading ios15 every time I open my Fitbit app it requests that I pair my versa 2 to my phone. Also noticed that I have to charge it twice as often now. Any suggestions would be helpful. Thanks!

About your other question, please note the battery life will depend on how frequent certain features are used such as GPS or SpO2 tracking. I'd suggest trying the tips described in this help article to maximize the battery life, fully charging your watch with the original charging cable and monitor its behavior in the next days.
