I know I've been into my goals before on my Dashboard or Profile but now cannot find them. Particularly Zone Minutes - don't think I've ever seen my goal for those.

Thanks for the details shared in your post. I understand your concern and recommend doing the following:
1. Open the Fitbit app, tap the Today tab > your profile picture > Activity & Wellness.
2. Tap Daily activity.
3. Tap the part of the goal you want to adjust, and follow the on-screen instructions to make your changes.
