Do you mean to make it so none of you steps, calories burned, etc, never happened?
That question needs to be answered before going forward, what do you want to have go away.
Pretend you just opened the box and haven't created an account with Fitbit, or what?
And not trying to get too personal, but why?

I have a desk job and it’s saying I’ve done like 200 steps or close to it in one hour when I haven’t I tried to reset it by the button on the charger but that didn’t work

Please be aware that arm movements while sitting down that can be mistaken as arm movements when walking are often counted as steps.
Other mistaken activities (non-inclusive list) are:
For individual periods when you have sat at a desk and were credited with steps you can make the steps and calories associated with that activity "go away" by booking a driving activity.
Look at message number three in the post below for the directions to do that. Oh - you can add steps while driving to the list above as you will see in the post below.
