This is happening to me too.
My phone is running IOS 14.4.1.
Charge 4 with latest app and firmware (48.20001.100.34) updates.

Here we go again! Did the latest iOS update a couple days ago, heart rate graph is gone AGAIN! Just like in September or so of 2020! I have iOS 14.4.1. iPhone XS. Fitbit app up to date. No sleeping heart rate graph. This is very important right now; I need to monitor due to medications I take. What gives?

I got sleep metrics last night. This is really weird but true for my
Inspire 2. Don’t turn on the sleep log because it disables the sleep app
from tracking your heartbeat which generates the data. Just go to sleep
and the tracking will automatically happen.
I still can’t see it on my tracker which is strange. When I hit on the Moon
picture it says “No Data”. But when it syncs with my phone I can definitely
see the information. At least for last night.
I found this answer in a random faq. Don’t ask me where? Navigating the
community and help info is clunky for me.
Note: I am replying to this post via my iPhone which usually just says
“sent from my iPhone”. Apologies if more contact info is there. It usually
isn’t when I send mail from my phone. @JuanFitbit please tell me how to
disable if that happens again with this post. I don’t want to violate any
rules. Oh and thanks for working the problem for us. We really appreciate
the attention!

No need to apologize.
This things happens and mostly without our knowledge.
To remove the personal information from any other posts, you will need to edit the post directly. Click the Options drop down menu at the top right of your post. Select "Edit post" then remove any personal information and click "Post" to publish the updated version.
If you've used the reply by email feature to respond to other posts, it's possible that your email signature was attached to those as well.

On 9/18/20, the earlier premium sleeping heart rate recovery chart issue was apparently resolved in version 3.29.
Now the problem has returned in version 3,40. (Updated on March 22, 2021).
If I edit the sleep interval to begin and end on the same calendar day, the chart appears normally. But for a sleep interval beginning before midnight and ending after midnight, the chart no longer appears.
The O2 saturation chart appears normally either way.
Please advise of status of resolution of this repeated glitch.

iPhone 12 Pro Max (same happened on my iPhone XS max)
Sleeping Heart Rate graph is empty when it updates my overnight sleep information. However the heart rate data is available in the regular graph.
Apparently this was a known issue sometime ago, but it has just started on mine. Even previous graphs that were available have gone blank.
I have reset my watch, I have turned the heart rate tracking on and off, resyncing each time, deleted the app and rebooted phone and then installed app. None of these dteps have helped.

My Inspire 2 does not show the Restoration graph anymore (for the past 2 nights, I think it was after I software update) it tells me the numbers just not the graph ☹️

Did you reboot the watch? Close and log back in the app? Or did you just access the sleep score?

Same issue here. iPhone 12 Pro Max, iOS 14.4.2 and Fitbit 3.40 (1042), Swedish. Heart recovery chart is blank, and has been for a while.
