So I’m trying to set up my Fitbit on the app and I’m repeatedly greeted with an accept the terms and conditions window, yet clicking the “next” button does nothing.
youd think given developers get access to these sort of major updates three months early this wouldn’t be an issue...

This appears to be a known issue. Keep an eye on the following thread that has the latest updates from fitbit:
