@Tricksycat For the most part, seeing the Fitbit iOS App in landscape mode is not possible.
The only parts of the iOS App that I am aware of that can be viewed in landscape mode are the expanded graphs. For instance, if you click your step tile on your iOS dashboard and then click the diagonal arrow button in the top right-hand corner, these graphs can be viewed in landscape mode.

@Tricksycat I'd recommend up-voting and commenting on this feature request for an iPad-specific version of the iOS Fitbit App.
