Cellular data access is enabled for fitbit in iOS settings and there is no issue with the LTE connection. However my fitbit charge 5 is only able to sync when I am connected to WiFi.
To be fair it does eventually sync when I force close the app and restart my phone. But that's such a hassle, I can't be restarting my phone everytime I step outside. This is not a solution, the fitbit app needs to be fixed so that it's a seamless transition from WiFi to cellular data. Literally no other app on my phone has this issue.
I have seen several posts from last year of people complaining about this issue and they just end up being closed by moderators after a few months and several generic responses like our team is looking into it. However, it's been more than a year now and still no fix. Your team needs to be more agile.
P.S. I am sure I'll be receiving those same patronizing responses about referring to the help article and generic troubleshooting steps like unpair Bluetooth etc -- trust me I've gone through all of that and there's no point sharing it with me. If there's a way to provide diagnostics data, I am happy to help.

I’m just throwing this idea out but have you checked these settings:
Go to your phones settings then tap the Fitbit App and check that Cellular Data and Background App refresh are enabled.
