The Alta HR doesn't but some other models do track skin temperature:
"Fitbit Sense uses a dedicated sensor to estimate your skin temperature variation each night. Fitbit Charge 4, Fitbit Charge 5, Fitbit Inspire 2, Fitbit Ionic, Fitbit Luxe, and Fitbit Versa series surface your nightly skin temperature variation through existing sensors."

It is also possible to manually record your core temperature with some models, the Sense and Versa 3, but again not the Alta models.
