For what you mention, it seems like your tracker is not syncing whenever you check your information on your app.
Make sure that whenever you open up the Fitbit app on your phone, your tracker syncs. If it's having issues syncing, try to restart your tracker by pressing/holding the left and lower right buttons for 10-12 secons until your tracker reboots. Once this happens, open up the Fitbitg app once again and get your tracker to sync and all your information should match.
