Sleep and all other activities, except steps, are erased each day. For all previous days, it displays sleep and other activities for the current day only. Steps remain correct for other days.

Don't worry about that.  Plenty of people even younger than you manage to sort this out.

When you use the left and right arrows to change day on the dashboard, the data above the horizontal line, i.e. steps, floors, miles, calories, active minutes change to the given day.  But all the tiles below the horizontal line do not change but still show today's data.  To see previous day's data for those, tap on the tile and it will list that data piece's history day by day.

However I'm not sure this explains your problem as you say only steps are correct, and all the data above the horizontal line should be correct as you scroll to previous days.

can you please explain exactly where you are looking and not seeing previous days' data?

I see the current night's sleep, but when I go to any previous day it also lists  the current day's sleep. The same is true for # of hours active. The only thing that is correct is steps and it stays correct for previous days. I'm looking on the board.

I'm on my smartphone, not an iPhone, looking at the dashboard. I get there from the Fitbit icon. I'm also 66 years old and I don't really understand all of this. Sorry.

Thank you. I thought that when I scrolled to a previous day, it would display correct data above and below the horizontal line. I feel like it did when I first got it. I think you meant people older than 66 not younger.
