My Blaze’s clockface changed from digital minutes to a regular clock face with hands. How can I change it back?

Go to settings on the computer Dashboard Scroll until you see clock face and expand and open and select the one you want..

 

 

I know I have been looking many times and click on a clock face and it changed it. I didn't realized it did. But it does.

Regarding to your inquiry, to see your options, open the Fitbit app and tap the Account icon > Blaze > Clock Face (Clock Display on Android). After making any change, I recommend syncing your Blaze to see the changes made.
