Fitbit Update 3/30:
Good news! This issue should now be fixed. You can re-add your exercises in the order/availability that you want, sync your tracker, and you should be good to go!
Thanks everyone for reporting this.
Fitbit Update 3/29: Hey everyone!
A few users have pointed out that they're seeing their exercise shortcuts list is being emptied on-device, meaning that Blaze devices that have historically been equipped with onboard exercise shortcuts now read "No Exercises." You will also see a message on your device about having no exercise shortcuts, with instructions to visit their settings to populate the list.
Our team is aware of the issue, and are working on a fix. For now, a good workaround would be to:
We've also seen a few instances where re-pairing the tracker to your account has alleviated the issue (using these instructions). If you do go this route, please be sure to sync before doing so!
This should wrap it up! Be sure to let us know if you have any questions.

@SamFRN, if your question was directed to me; I used the phone app to fix the issue. It was the iOS app, to be exact.

This official moderator fix does not work. Blew my entire workout time this morning attempting to get my Exercise Shortcuts back - re-adding (five at at time, one at a time, different settings in tandem), synching, powering down the fitbit/app/phone.
Layls123 suggestion worked, however. Synch the Blaze to the app (iPhone for me), remove device from app, add device back to app. Data is all still here and the Exercise shortcuts have returned (even two hours later).
Glad too because I was ready to smash the three day old Blaze and order an iWatch. I am otherwise happy with it, and went with it because my 12YO daughter just got a ChargeHR (classmates are fitbit competitive) and I want to be able to encourage her along. It’s amazing how much her activity has increased with the community aspect of these things.

Good to know @EmersonFitbit! This happened to me this morning when I went to the gym and all my exercise shortcuts on my Blaze were gone. Thankfully I was listening to music on my phone so I went to the app and reset them and synced my Fitbit and then they reappeared. I wondered what had happened over night because they have been working fine since I got my Blaze earlier this month. If it happens again I won't worry about it since the glitch is being worked on and I'll just do what I did this morning. Hopefully this doesn't happen in the middle of a workout! Last week I started a workout and when I finished and went to end the workout it had stopped 1 minute in. I assumed I must have accidently hit the stop button. When I ride my horse this time of year I have a long sleeve shirt on, under a sweater, with a coat on and then I have to put my gloves on that go up to my Blaze so it can be easy to accidently shut it off without knowing.

I have tried to go into the app and add the exercises to the shortcut menu, but when I sync the Blaze they get removed instantly.
