For the last 3 days I have connected to GPS Connect when I begin my walk, but then anywhere between 5-10 mins my Blaze vibrates and I have the red icon in left corner with red X.

@teeblair I've had this issue a few months ago. I'd go to start a GPS exercise and my phone wouldn't connect or it would drop mid exercise like yours is doing.
The solution I came up with is that I do a phone restart every morning. It's like it refreshes the connection between my phone and Blaze. I haven't had a problem since I began doing this.

@TracyV125 i will restart my phone now, but I hope I don't have to do this every morning. That seems to be a pain.

@teeblair @TracyV125 Welcome to the Community! Thanks for posting a screenshot of what you're getting in your Blaze. The red phone icon that you're getting means that your Fitbit Blaze isn't connected to your phone's GPS. So, your exercise will still be tracked but it won't give you GPS information.
Please ensure the following: phone is within range, your app is open, phone is charged up, Bluetooth enabled and bonded, and Internet connection is present. You can learn more about connected GPS here.

@SilviaFitbit Hi Silvia, thank you for your reply. I am wondering if the internet connection is my issue. Typically when I am walking in the morninings I don't have internet connection but my phone switches to LTE. I do know that my phone is always in range and charged up, and that my Bluetooth is enabled.

Looks like you're in a building. GPS will not work in a building, however, if Google detects you are in one, based on when GPS last picked you up, it'll start giving you ratings on whatever shopping centre/store you happen to be in. Or the Directory if it's a mall. That's the case with my phone. Google has asked me on occasion if I want to view the flyer for that particular store.
Because you're in a building, there's nothing wrong with your watch or phone. GPS can't find you in a building. I'd ignore that, unless you're outside and it does happen.
LTE is considered connected to the Internet. My phone always shows a 3G, H+, or 4G connection.
As for the GPS issue with the watch, unless I'm in a building, I don't have that issue outdoors.
