It can be that the difference in the elevation while you were on the highway made your tracker to recognize that as floors climbed. Did you notice if there's any activity record for the time you were driving? If so, you can try to delete it and this should take away the floors climbed or if you notice steps being recorded for the time you were driving, you can log a driving activity from the activities list for the time frame you were in the car to get rid of this.
