I entered a work challenge with my Fitbit Blaze, I let a co-worker sinc hers on my phone as she doesn't have a smart phone. She has a different fitbit than I do. Now I deleted her because it was messing everything up, but I still have all of her steps for the past days and not mine. Help.

Huh... this sounds strange... When syncing a Fitbit tracker, it will only sync to the account where it has been paired to. If you by mistake paired her tracker to your account, it synced her information and your information together. The dashboard would have thought that you were using two trackers and with this, it might have created conflicts when syncing the data.
The best to do in these cases, is to make sure that if you'll sync somebody else's device, to log out of your Fitbit account first and after that, log in to the other person's Fitbit account under their own email address and password.
For now, if both trackers were syncing to the same account, there is no way to have it delete only the information recorded by her tracker, so I can recommend the following:
Tap on the account section at the top right corner of the dashboard. Here, make sure that you only have your own tracker paired. If you see her tracker paired to your account, tap on it, scroll to the bottom and hit the "Remove this tracker" option.
From there, only your tracker will by syncing to your account and as I explained before, if you will have her sync her tracker on your phone, make sure you're logging out of your account and logging into hers for it to sync.

Yep, I am sure that is what happened.
So, I have already deleted her... Is there anyway to go back to my steps, or do I just have to start fresh moving foward?

@kmcdougall81 If your tracker is the only tracker in your account then any steps synced to your account will be yours from now on. I would just continue on.
As @FerdinandFitbit. Stated there is no way to remove her steps from your acount.
next time make sure that you log out of your fitbit account first, then you can create or log into their account.

Yes, actually since both trackers were on the same account, there's no way to differentiate which steps were from which tracker, so the best is to start fresh from this point and make sure not to have her tracker paired to your account again.
If it was just for one or two days, I'd say it will not cause much of a big impact, so that should be fine.
