Is there a way to disable this? It seems to recognize my motorcycle as a bicycle, but only for parts of my trips. Or is it possible to delete steps, stairs after the fact?

Welcome to the Community @kmeissner. Unfortunately your Blaze is picking up vibrations from the motorcycle through the steering wheel and along your arm. There are some tips for you to prevent this to happen:
1. From your phone, you can download an app called DriveBit while will automatically create a driving activity for you and eliminate the steps.
2. You can follow @WendyB's suggestion and Manually Log the activity "Driving".

@AlejandraFitbit - what is the company's plans/timeline for providing a fix for this? It would be great if there was a menu option right on my device (Surge) to let it know I'll be on my motorcycle and to not count floors/steps. I am doing the manual edits, everyday.. editing steps and floors. It would be nice if it was at least easier to make the edits in the website's dashboard.

Welcome to the Community @hofforama. I don't have that specific information, but you can take a look at this request, vote for it and leave your comment. I know that it is for an One but in the comment you can share your ideas.

Best Answer@AlejandraFitbit - Thanks for the reply.. I think there are way more than enough comments already in here on this subject. I would think already enough to get the attention of management/development to implement a solution? How many votes does something need to get action taken?
