I was struggling to find a way to disable all alerts on my device as I did not want it to vibrate to let me know I had reached 10,000 steps, or some other arbitrary 'goal'.
After finding mixed offerings on the forums I tried using DND mode which, would you believe it, did nothing! I received two alerts back to back.
I opened a case and was told to try sleep mode. Which does infact work, although you lose the brightness and ability to spot check your device without physical interaction.
I just wanted to post this to let anyone in a similar situation know, sleep mode is sadly, the answer.

Hi, welcome to the Fitbit Community forums, @cm_west.
Thanks for sharing your inquiry about the DND mode on Charge 5.
I was able to check that Do Not Disturb Mode on this device should disable notifications, goal celebrations and reminders. Could you please confirm if the alerts you mentioned are the ones mentioned earlier? In the meantime, I do recommend that you try restarting your device using the charging cable and check if you continue to receive notifications when using this feature.
