I just transitioned from a Versa 2 to the Charge 6. The transition was flawless... kudos to the engineering team. The Versa had no issues automatically picking up on my bike rides. The Charge won't recognize the biking. I don't want to use GPS and id rather not have to "start" the exercise on the tracker. Am I missing something?

Hi @rickharris, thank you for posting in the community. It's great to have you here!
Let me help you manage the activities your Charge 6 will track automatically.
Charge 6 can automatically detect certain workouts and open the Exercise app after a few minutes. Make sure this feature is on:
For more information about the SmartTrack feature, see How do I track my activity with my Fitbit device? > What are real-time workout stats in the Fitbit app?

I don't want to use the tracker GPS. I would just like it automatically track the outdoor bike. It seems to be set correctly, but it won't track.

No idea if this helps but I have just discovered that, despite the FitBit app being set to auto detect Outdoor Biking, when I navigated to the exercise on my FitBit Charge 6 itself, the slider for auto detect was set to off. I tapped it to flick it on (as it is in the app!) and now it works!
Why the app and the device are different I will never know but there you go.
