I'm seeing more users report that the activity they used to select is no longer showing up, even though it was there the day before. So far, I haven't seen a fix or workaround.
For now, please submit this issue using the Feedback option in the Fitbit app:
The feedback reports are received by the team for review.
If I find any additional information or updates, I'll report back.

Thanks for letting us know that you are able to select Horseback riding again.
Apparently whatever Fitbit app issue that was causing "custom" activities not to show up when they worked before has been resolved. I'm seeing other users who had reported a similar issue to yours are now reporting that they are able to use the custom activity again.
Please let us know if the problem re-appears.
