What's the deal with the scanner not working for anything in Australia?

Also no Australian brands/foods are listed?    

How do fellow Aussies manage their calorie counting?

Hello @Mimone88 and welcome to the Community.  According to this Help article, barcode scanning is only available in the US.  @NellyG is an Aussie Fitbit PE.  I'm tagging her in the hope that she can help answer your question.
